Christmas Boiled Cake With An Orange Twist – Recipe

With Christmas comes tradition and nothing could be more perfect than this old-fashioned boiled cake. It makes a great family treat for afternoon tea during the festive season. Aunty Zelda may love a cuppa with her slice of yummy cake but maybe the younger crowd may call it their “cocktail with cake hour”. You can cook this ahead of time and have it ready on the bench.


2 eggs
5 ozs butter
1 cup sugar
1 tsp bicarb soda
1 tsp mixed spice
375g mixed fruit
125g dates
125g dried cherries or
125g walnuts or almonds
1 tbsp grated orange rind
125g apricots
1 cup self raising flour
1 cup plain flour
1 cup orange juice
½ cup rum or sherry


  • Preheat oven to 160C
  • Paper and grease a 20cm square cake tin
  • Boil sugar, water, spirits, butter, soda, spice and chopped fruit for 12 minutes
  • Cool a little
  • Add flour, eggs, chopped walnuts/almonds.
  • Stir well
  • Bake at 160C for 45mins
